Aline & Champagne Olivier Horiot
Olivier Horiot is located in the south of the Champagne appellation, a few steps away from the first terroirs of Burgundy. A region famous for its pinot noirs but rich in a large biodiversity where we also find some vines of meunier, chardonnay and forgotten grape varieties.
Olivier has done a magnificent job of promoting his vines and his champagnes. For a few years now, his partner Marie has invested a lot of time in the vinification of the different vintages and has brought a new impetus to this family estate which was already very dynamic. Their wines are present in many countries and on the tables of the best restaurants in the world. I have been working with Olivier and Marie for almost 15 years and the idea of continuing the Aline Collection with them was an obvious one for all of us.
The procedure for the elaboration of this cuvée was the same as for Jérôme Bourgeois Diaz: in the cellar, I tasted and re-tasted all the vats and barrels on all the parcels. One of these barrels was very different from the rest. I was looking for the grape variety, the type of soil, but I sometimes had the impression of finding Jura vibrations. It was only when I saw the small parcel from which it came that I could understand my hesitations. It is indeed on a very dense black marl soil that these white grapes have grown and taken a totally atypical turn.
